A hangi is a feast cooked in an earth oven for several hours. People have used this method for over hundreds of years. The food used in a hangi is locally produced meat and vegetables such as pork, chicken, lamb, beef, pumpkin, kumara, potato, fish and eels.
The food is prepared, peeled, cut and wrapped in either flax leaves or cabbage. It is then placed in baskets before being lowered into a hangi pit.
I am sharing my Hangi research that learned about from this week.
